Tonkatsu Dinner with Japanese-style Potato Salad

 

 

Tonkatsu is a breaded deep-fried pork and a very popular dish in Japan. 

    "Ton" means pork in Japanese and "katsu" derives from the word cutlet. 

    Tonkatsu dinner is typically served with shredded cabage and Japanese style potato

    salad, which is richer in flavor than American style potato salads.

    To complete as dinner, serve with rice and miso soup.

 

 

 

 

<Tonkatsu> 4 servings

                                          

Ingredients:  

From your local grocery store

  4 pork chops (thin slice)

  1 egg

  1/3 cup flour

  1/2 tbsp water

  salt & pepper

  Vegetable oil for frying

  Shredded cabbage

  Slices of Tomato for garnishment

  1/2 cup panko bread crumbs

  Tonkatsu sauce

  Japanese style mustard

 

Cooking Direction:

1. Salt and pepper the both side of pork chops, and coat them lightly with flour.
2. Beat egg and water together in a shallow dish. Dip the pork in the beaten egg.
3. Coat the pork with panko.
4. In 350F oil, deep-fry the panko-coated pork each side for a few minutes until golden brown.

    (internal temperature 160F)
5. Carefully take Tonkatsu out of oil to a paper towel to drain excessive oil. Cut each Tonkatsu into smaller pieces.
6. Serve Tonkatsu with shredded cabbage, Japanese-style Potato Salad, and slices of tomato on a plate.
7. For dipping sauce, use Tonkatsu sauce and Japanese style mustard.

                                 

<Japanese-style Potato Salad> 4 servings

                                             

Ingredients: 

From your local grocery store

  3 medium Yukon Gold potatoes

  1 small carrot, thinly sliced

  1/3 English cucumber, thinly sliced

  1/2 small onion, thinly sliced

  1 hard boiled egg, finely chopped

  Salt & White pepper

  3/4 to 1 cup Japanese mayonnaise

 

Cooking Direction:

1. Wash potatoes and boil them in a large pot until soften, then carefully peel the skin and mash them in a large bowl
    while they are still hot. Cool the mashed potato.
2. Thinly slice the cucumber, place them into a small bowl with a pinch of salt, and mix them well. Set it aside.
3. Thinly slice the onion, soak them into cold water in a small bowl, and set it aside.
4. Thinly slice the carrot into half-round shape.
5. (Alternatively, you can sauté the sliced onion and carrot in ½ tbsp. butter until tender over medium heat.

     Don’t brown them.)
6. Wash the cucumber in water and squeeze water out well.
7. Squeeze water out of the onion.
8. After the mashed potato is cooled, add the cucumber, onion, carrot, hard-boiled egg, and mayonnaise to the potato
   and mix well. Salt and pepper to adjust the taste.

 

<Miso Soup>

You already worked hard enough to prepare Tonkatsu and Potato Salad.

Just boil some water and add it to a tasy instant miso soup mix. (see below)

 

<Rice>

You can cook rice in a pot. But it requires experience to make perfect rice.

We recommend you get a rice cooker - easier way to cook and always tasty.
